Ice Cream Recipes - Kulfi

Ingredients

  • 2.25l/4 pts milk

  • 60ml/4 tbsp sugar

  • 50g/2 oz flaked almonds

  • 15ml/1 tbsp sliced pistachios

  • 5ml/1 tsp ground cardamom

  • 10ml/2 tsp rose water


Method:

  1. Rinse a heavy-based pan with cold water. Pour in the milk and sugar, bring to the boil, then simmer gently to reduce the milk to 300ml/1/2 pt, stirring occasionally.

  2. Stir in the nuts and cardamom and leave to cool. Stir in the rose water.

  3. Pour into conical kulfi containers or small plastic cups, cover and freeze, stirring every 20-30 minutes to prevent the nuts settling to the bottom. Cut into rounds to serve.
