Ice Cream Recipes - Lime and Lemon Sorbet

Ingredients

  • 225g/8 oz caster sugar

  • 750ml/1 1/4 pt water

  • grated rind and juice of 4 limes

  • grated rind and juice of 2 lemons

  • 1 egg white


Method:

  1. Heat the sugar and water over a gentle heat, stirring until the sugar dissolves. Bring to the boil and boil for 5 minutes.

  2. Stir in the lime and lemon rind and juice and leave to cool. Pour into a freezer container and freeze for 2-3 hours until slushy, stirring occasionally.

  3. Whisk the egg white until stiff then fold it into the mixture and return to the freezer until firm, stirring occasionally.

  4. Transfer to the refrigerator for 30 minutes before serving.
