Ice Cream Recipes - Mango Ice cream

Ingredients

  • 60ml/4 tbsp custard powder

  • 100g/4 oz sugar

  • 1.2l/2 pts gold top milk

  • 300ml/1/2 pt double (heavy) cream

  • 2 large ripe mangoes, peeled and diced

  • 5ml/1 tsp vanilla essence (extract)


Method:

  1. Mix the custard powder and sugar with a little milk. Bring the remaining milk to the boil, stir in the custard powder mixture and return to the boil.

  2. Reduce the heat to low and simmer for 2 minutes. Remove from the heat, cover and leave to cool.

  3. Whip the cream until stiff. Stir the cream, mangoes and vanilla essence into the milk, pour into a box and freeze until firm.

  4. When firm, remove and whisk until smooth and spongy. Return to the freezer for 1 hour before serving.
