Indian Recipes - Pistachio Kulfi Indian Recipe
Ingredients
225g/8 oz pistachios
300ml/1/2 pt milk
250ml/8 fl oz single (light) cream
25g/1 oz sugar
pinch of salt
2.5ml/1/2 tsp kewra water
Method:
Grind the pistachios finely with a little milk. Stir into the remaining milk in a pan and bring to the boil.
Add the cream and simmer over a medium heat for 10 minutes. Stir in the sugar and salt and cook for a further 5 minutes.
Remove from the heat and leave to cool. Pour into moulds and freeze until firm. Sprinkle with kewra water before serving.
