Dals Recipes - Black Beans and
Spinach Recipe
Ingredients

100g/4 oz/2/3 cup split black
beans
-
600ml/1 pt/2 1/2 cups water
-
Pinch of ground turmeric
-
salt
-
225g/8 oz spinach, chopped
-
30ml/ 2 tbsp ghee
-
15ml/ 1 tbsp finely chopped
onion
-
2 cloves garlic, crushed
-
5ml/ 1 tsp cumin seeds
-
2.5ml/1/2 tsp chili powder
-
Pinch of asafoetida
Method:

Boil the split beans, water,
turmeric and salt then simmer for 30 minutes,
stirring occasionally. Add the spinach and cook for
10 minutes. Heat the ghee and fry the onion and
garlic until golden.

Add the cumin seeds, chilli
powder and asafoetida and fry for 1 minute. Pour
over the beans and spinach, cover and cook for 5-10
minutes. Serve hot with Nan bread or rice.
