Chick Peas with Ginger
Recipe
Ingredients

2 onions
-
60ml/4 tbsp ghee
-
2 cloves garlic, chopped
-
25g/1 oz ginger root, finely
chopped
-
15ml/1 tbsp black peppercorns,
crushed

10ml/2 tsp ground turmeric
-
225g/8 oz/1 2/3 cups chick peas
(garbanzos), soaked overnight

1l/1 3/4 pts/4 1/2 cups non-salty
stock
Method:

Chop 1 onion and slice the
other. Heat 45ml/3 tbsp of the ghee and fry the
chopped onion until soft and lightly browned. Stir
in the ginger, peppercorns, turmeric and chick peas
and fry for 3 minutes.

Add the stock, bring to the
boil, cover and simmer for 1 hour, stirring
frequently, until the chick peas are tender and
slightly mushy.

Meanwhile, heat the remaining
ghee and fry the sliced onion until crisp and brown.
Serve the chick peas garnished with the onion.
