Dals Recipes - Gram Flour Pakori in
Yoghurt Recipe
Ingredients

100g/4 oz/ 1 cup gram flour

15ml/1 tbsp oil

2.5ml/1/2 tsp garam masala

1.5ml/1/4 tsp ground red chili

salt

75ml/5 tbsp warm water

oil for deep-frying

450ml/3/4 pt/2 cups natural
(plain) yoghurt

salt

5ml/1 tsp ground roasted cumin
-
15ml/1 tbsp chopped fresh
coriander (cilantro)
Method:

Place the flour, oil, garam
masala, chili and salt in a bowl and mix thoroughly.
Gradually blend in the water to a smooth batter.
Heat the oil in a deep frying pan (skillet) on a
medium-low heat. Take about 2.5ml/1/2 tsp of batter
and slip it gently in a round shape into the oil.
Repeat until all the batter is used up. Fry until
golden brown then remove with a slotted spoon and
place on a cooling tray.

Meanwhile, bring a large pan of
water to the boil. Place all the pakoris into the
boiling water, turn off the heat and leave to soak
until the water is cold and the pakoris are soft.
Remove the pakoris and gently squeeze out the water
without spoiling the shape.

Place the yoghurt in a bowl and
stir in some salt, half the cumin, half the
coriander and all the squeeze pakori. Leave in the
refrigerator for 2 hours before serving sprinkled
with the remaining cumin and coriander.
