Dals Recipes - Lentil Curry Recipe

Ingredients

  • 350g/12 oz/2 cups red lentils, soaked in water for 20 minutes

  • 1.5l/2 1/2 pts/ 6 cups water

  • 5ml/2 tbsp ground turmeric

  • 1 cinnamon stick

  • 2.5ml/1/2 tsp black peppercorns

  • 3 bay leaves

  • 6 cardamom pods

  • 6 cloves

  • salt

  • 45ml/3 tbsp vegetable oil

  • 1 onion, thinly sliced

  • 2.5cm/1 in ginger root, finely chopped

  • 4 cloves garlic, thinly sliced

  • 2 green chilies, chopped

  • 1 large tomato, skinned and chopped


Method:

  1. Boil the lentils with the water, turmeric cinnamon, peppercorns, bay leaves, cardamom, cloves and a little salt for 20 minutes until soft. Heat the oil and fry the onion, ginger, garlic and chilies until browned.

  2. Pour over the lentils, add the tomato, cover and simmer for 10 minutes, stirring occasionally. Serve hot with chapatis or pulau rice and chicken dish.
