Dals Recipes - Lucknow-style Lentils Recipe

Ingredients

  • 350g/12 oz/2 cups red lentils, soaked in cold water for 20 minutes

  • 1.5l/2 1/2 pts/ 6 cups water

  • salt

  • 5ml/1 tsp ground turmeric

  • 45ml/3 tbsp oil

  • 15ml/1 tbsp cumin seeds

  • 1 onion, chopped

  • 6 cloves garlic, crushed

  • 2.5cm/1 in ginger root, chopped

  • 1.5ml/1/4 tsp chili powder

  • 15ml/1 tbsp lemon juice


Method:

  1. Boil the dal in the water with the salt and turmeric for about 20 minutes until tender. Heat the oil and fry the cumin seeds for 1 minute. Add the onion, garlic and ginger and fry until browned.

  2. Add the chili powder and stir for 30 seconds. Pour over the lentils, mix thoroughly and bring to the boil. Stir in the lemon juice and serve hot with plain rice and lamb.
