Masoor Dal

Ingredients

60ml/4 tbsp oil or ghee
-
2.5ml/1/2 tsp mustard seeds
-
5ml/1 tsp cumin seeds
-
1 small onion, finely chopped
-
2.5ml/1/2 tsp ground red chili
-
225g/8 oz canned tomatoes
-
15ml/1 tbsp lemon juice
Garnish
-
15ml/1 tbsp chopped fresh
coriander (cilantro)

2.5ml/1/2 tsp garam masala

1 small green chili, chopped
Method:
-
Place the lentils, turmeric,
water and salt in a large pan, bring to the boil and
skim off any scum. Simmer over a medium heat for 20
minutes.

Meanwhile, heat the oil or ghee
in a heavy-based pan and fry the mustard seeds until
they start cracking. Add the cumin seeds and onion
and fry until golden brown.

Stir in the chili, tomatoes
and lemon juice and cook until the water has been
absorbed and the ghee appears on the surface. Stir
in the cooked dal and simmer for 5 minutes. Sprinkle
over the garnish ingredients and serve hot with
rice, okra, raita and a meat curry.
