Dals Recipes - Moong Beans Recipe

Ingredients

  • 250g/9 oz/1 1/2 cups moong beans, soaked overnight

  • 2.5ml/1/2 tsp ground turmeric

  • 1.75l/3 pts/7 1/2 cups water

  • salt

  • 60ml/4 tbsp ghee or oil

  • 5ml/1 tsp cumin seeds

  • 1 medium onion, finely chopped

  • 2.5ml/1/2 tsp ground red chili

  • large pinch of ground turmeric

  • 2.5ml/1/2 tsp garam masala

  • 2.5ml/1/2 tsp ground roasted cumin

  • 15ml/1 tbsp lemon juice

Garnish

  • 15ml/1 tbsp chopped fresh coriander (cilantro)

  • 2.5ml/1/2 tsp garam masala

  • 1 small green chili, chopped


Method:

  1. Place the beans, turmeric, water and salt in a pan, bring to the boil and skim off any scum. Reduce the heat to medium-low, cover and simmer for 50 minutes until the beans are tender.

  2. Meanwhile, heat the ghee or oil in a heavy-based pan and fry the cumin seeds until lightly browned. Add the onion and fry until golden brown. Stir in the chili, turmeric, garam masala and cumin.

  3. Stir in the cooked beans and lemon juice and simmer for a further 10 minutes. Sprinkle over the garnish ingredients and serve hot with rice, stuffed aubergine and cauliflower.
