Dals Recipes - Nutty Sprouted Lentils
Recipe
Ingredients
-
100g/4 oz/2/3 cup whole green
lentils
-
45ml/3 tbsp fenugreek seeds
-
45ml/3 tbsp oil
-
2.5ml/1/2 tsp mustard seeds
-
2.5ml/1/2 tsp split black beans
-
2 dried red chilies
-
2 onions, finely chopped
-
2.5cm/1 in ginger root, thinly
sliced

2 green chilies, chopped
-
5ml/1 tsp soy sauce
-
salt
-
5ml/1 tsp sugar
-
45ml/3 tbsp water
-
juice of 1/2 lime
-
30ml/2 tbsp roasted peanuts
Method:
-
Soak the lentils and fenugreek
seeds in water overnight then drain and cover with a
damp cloth. Leave in the warm for 8-10 hours until
sprouted.

Heat the oil and fry the
mustard seeds, beans and chilies until the seeds
start cracking. Add the onions and ginger and fry
until browned. Add the chilies, soy sauce, salt and
sugar and fry until the oil appears on the surface.

Add the lentils and fenugreek
seeds and water, cover and simmer until the lentils
are tender. Stir in the lime juice and peanuts.
