Dals Recipes - Simple Sprouted Lentils Recipe

Ingredients

  • 100g/4 oz/2/3 cup whole green lentils

  • 30ml/2 tbsp oil

  • 2.5ml/1/2 tsp cumin seeds

  • 2 onions, chopped

  • 2 green chilies, chopped

  • Pinch of ground turmeric

  • 120ml/4 fl oz/1/2 cup water

  • salt and pepper

  • juice of 1 lime

  • 2.5ml/1/2 tsp sugar


Method:

  1. Soak the lentils in water overnight then drain and cover with a damp cloth. Leave in a warm place for 8-10 hours until sprouted.

  2. Heat the oil and fry the cumin seeds for 1 minutes. Add the onions and chilies and fry until soft but not browned. Add the turmeric, sprouts, water, salt and pepper, stir well, cover and simmer for 10-15 minutes until the sprouts have softened. Stir in the lime juice and sugar before serving.
