Ingredients

120ml/4 fl oz/1/2 cup water

175g/6 oz/1 cup split black
beans, soaked overnight

salt
-
1 onion, finely chopped
-
1cm/1/2 in ginger root, finely
chopped

1 green chili, finely chopped
-
30ml/2 tbsp chopped fresh
coriander (cilantro)

250ml/8 fl oz/1 cup oil
Method:

Grind the water, drained split
beans and salt to a fine paste. Stir in the onion,
ginger , chili and coriander (cilantro), divide into
about 20 balls and flatten them slightly.

Heat the oil and fry the balls
over a medium heat for about 2-3 minutes until
golden brown and crisp. Drain on kitchen paper and
serve hot with coconut chutney.
