Peas with Tomatoes and Apples
Recipe
Ingredients
Tarka
-
90ml/4 tbsp ghee
-
5ml/1 tsp cumin seeds
-
1 medium onion, finely chopped
-
5ml/1 tsp garam masala
-
2.5ml/1/2 tsp ground red chili
-
2.5ml/1/2 tsp ground turmeric
-
400g/14 oz canned tomatoes,
chopped
-
250g/9 oz cooking apples,
peeled, cored and chopped into 1cm/1/2 in pieces
Garnish
-
1.5ml/1/4 tsp garam masala
-
15ml/1 tbsp chopped fresh
coriander (cilantro)

1 small green chili, chopped
Method:

Place the split peas,
turmeric, salt and water in a heavy-based pan and bring to
the boil over a medium heat. Skim off any scum. Reduce the heat
to medium-low, cover and cook for 25 minutes until
tender.

Meanwhile, heat the ghee in a
heavy-based pan and fry the cumin seeds until
lightly browned. Add the onion and fry until golden
brown. Stir in the garam masala, chili and
turmeric. Stir in the tomatoes and apple and cook
for about 25 minutes until all the liquid has been
absorbed and the oil appears on the surface of the
mixture.

Mix together the tarka and then
cooked dal and simmer for 2 minutes. Sprinkle over
the garnish ingredients and serve hot with chapatis,
rice, stuffed aubergine or okra and raita.
