Sukha Dal
Recipe
Ingredients

30ml/2 tbsp ghee
-
2.5ml/1/2 tsp mustard seeds
-
1.5ml/1/4 tsp asafoetida
-
450g/1 lb/2 2/3 cups whole
green lentils, soaked overnight
-
2 onions, chopped
-
3 green chilies, chopped
-
100g/4 oz/1 cup desiccated
(shredded) coconut
-
1.5ml/1/4 tsp ground turmeric
-
salt
-
300ml/1/2 pt/1 1/4 cups hot
water
-
juice of 1 lemon
-
2.5ml/1/2 tsp chili powder
-
15ml/1 tbsp chopped fresh
coriander (cilantro)
Method:
-
Heat the ghee and fry the
mustard seeds and asafoetida until the mustard seeds
start cracking. Add the lentils, onions, chilies,
coconut, turmeric and salt.
-
Add the hot water and simmer
over a low heat for about 20 minutes until the
lentils are tender and the water has been absorbed.
Add the lemon juice and sprinkle with chili powder.
Garnish with coriander and serve hot with chapatis
or plain rice and a lamb curry.
