Dals Recipes - Yellow Split Peas with
Vegetables Recipe
Ingredients

45ml/3 tbsp oil
-
2 onions, chopped
-
8 cloves garlic, chopped
-
2.5cm/1 in ginger root, chopped
-
4 green chilies, chopped
-
350g/12 oz/2 cups yellow split
peas, soaked in cold water for 20 minutes

5ml/1 tsp ground turmeric
-
459/1 lb spinach, chopped
-
3 tomatoes, skinned and chopped
-
450g/1 lb green beans, chopped
-
1 aubergine (eggplant), cubed
-
1 potato, cubed
-
45ml/3 tbsp chopped fresh dill
(dill weed)

salt
-
1.5l/2 1/2 pts/6 cups water
Method:
-
Heat the oil and fry the
onions, garlic, ginger and chilies until golden. Add
the turmeric and fry for 1 minute. Add the split
peas, vegetables, dill and salt and stir over a low
heat for 5 minutes.

Add the water, bring to the
boil, cover and simmer for 30-40 minutes until the
vegetables and split peas are tender, stirring
occasionally. Serve with plain rice and beef curry.
