Dishes Recipes - Apple Pulao Rice Recipe
Ingredients

3 apples, peeled, cored and cut
into 8

1/5l/7 1/2 cups water

350g/1 cup sugar
-
2.5ml/1/2 tsp ground saffron
-
45ml/3 tbsp ghee
-
2 bay leaves
-
2 cinnamon sticks
-
8 cloves
-
5ml/1 tsp cardamom seeds
-
225g/8 oz basmati rice, soaked
-
50g/2 oz flaked almonds
-
50g/1/3 cup raisins
Method:

Put the apples and 450ml/3/4
pt/2 cups of water in a pan, bring to the boil and
simmer for 4 minutes then drain. Put the sugar and a
further 450ml/3/4 pt/2 cups of water in a separate
pan, add the apple pieces, bring to the boil and add
the saffron. Simmer for 30 minutes until about
one-third of the syrup remains.

Heat the ghee and fry the bay
leaves, cinnamon, cloves and cardamom for 1-2
minutes. Add he rice, almonds and raisins and fry
for 3 minutes. Add the remaining water, bring to the
boil then simmer for 15 minutes until the rice is
almost cooked.

Remove from the heat, make a
well in the centre and spoon in the apple pieces
with a little syrup. Cover with rice and pour the
remaining syrup on top. Cook on a low heat for about
15 minutes until the rice is cooked.
