Rice Dishes Recipes - Aubergine and Mushroom Pulao Rice Recipe

Ingredients

  • 30ml/2 tbsp ghee

  • 1 onion, chopped

  • 5ml/1 tsp cumin seeds

  • pinch of asafetida

  • 600ml/1 pt stock

  • 225g/1 cup basmati rice, soaked

  • 50g/2 oz aubergine (eggplant), chopped and par-boiled

  • 50g/2 oz mushrooms, chopped

  • salt

  • 2.5ml/1/2 tsp cayenne

  • 5ml/1 tsp garam masala

  • 1 lemon, sliced


Method:

  1. Heat the ghee and fry the onion until golden. Stir in the cumin and asafetida. Add the stock and bring to the boil. Add the rice and vegetables and season with salt and cayenne.

  2. Cover and simmer for 15 minutes until the rice is tender. Remove the lid, sprinkle with garam masala and cook for 5 minutes. Serve garnished with the lemon slices.
