Basmati Pulao Rice Recipe
Ingredients

450g/2 cups basmati rice,
soaked for 20 minutes

seeds from 6 cardamom pods
-
1.5ml/1/4 tsp cloves
-
3 bay leaves
-
1 cinnamon stick
-
2.5ml/1/2 tsp black peppercorns
-
1 onion, thinly sliced
-
3 cloves garlic, sliced
-
15ml/1 tbsp oil
-
1.2l/5 cups water
-
salt
Method:

Preheat the oven to
200C/400F/gas mark 6. Place all the ingredients in
a large pan and bring to the boil. Cover and simmer
gently for 7-10 minutes until the rice is
three-quarters cooked. Drain and transfer to a
casserole dish.

Cover with foil and the lid.
Reduce the oven temperature to 150C/300F/gas mark
2 and cook for 5-8 minutes. Turn off the heat and
leave the casserole for a further 5 minutes before
serving hot.
