Rice Dishes Recipes - Basmati Pulao Rice Recipe

Ingredients

  • 450g/2 cups basmati rice, soaked for 20 minutes

  • seeds from 6 cardamom pods

  • 1.5ml/1/4 tsp cloves

  • 3 bay leaves

  • 1 cinnamon stick

  • 2.5ml/1/2 tsp black peppercorns

  • 1 onion, thinly sliced

  • 3 cloves garlic, sliced

  • 15ml/1 tbsp oil

  • 1.2l/5 cups water

  • salt


Method:

  1. Preheat the oven to 200C/400F/gas mark 6. Place all the ingredients in a large pan and bring to the boil. Cover and simmer gently for 7-10 minutes until the rice is three-quarters cooked. Drain and transfer to a casserole dish.

  2. Cover with foil and the lid. Reduce the oven temperature to 150C/300F/gas mark 2 and cook for 5-8 minutes. Turn off the heat and leave the casserole for a further 5 minutes before serving hot.
