Rice Dishes Recipes - Black Bean Rice Recipe

Ingredients

  • 225g/1 cup long-grain rice

  • 600ml/1 pt/2 1/2 cups water

  • 30ml/2 tbsp cashew nuts, halved

  • 15ml/1 tbsp ghee

  • salt

Masala

  • 30ml/2 tbsp split black beans

  • 5ml/1 tsp black peppercorns, crushed

  • 30ml/2 tbsp sesame seeds

  • 30ml/2 tbsp grated (shredded) copra

Seasoning

  • 30ml/2 tbsp ghee

  • 5ml/1 tsp mustard seeds

  • 5ml/1 tsp split black beans

  • 5ml/1 tsp yellow split peas

  • 1 dried red chilies, halved

  • 2.5ml/1/2 tsp asafetida

  • 2 green chilies, finely chopped

  • 2-3 curry leaves


Method:

  1. Cook the rice in boiling water for about 10 until tender then drain and set aside. Dry roast the masala ingredients until lightly colored then grind to the fine powder.

  2. Heat the ghee and fry the cashew nuts until golden then set aside. Heat the seasoning ghee and fry all the seasoning ingredients except the chilies and curry leaves until the mustard seeds start crackling.

  3. Add the green chilies and stir in the rice. Sprinkle with the masala powder and salt. Stir in the curry leaves and garnish with the fried cashew nuts before serving.
