Rice Dishes Recipes - Cauliflower Pulao Rice Recipe

Ingredients

  • 50g/2 oz ghee

  • 1 onion, chopped

  • pinch of asafetida

  • 2.5ml/1/2 tsp cumin seeds

  • 4 bay leaves

  • 2.5cm/1 in cinnamon stick

  • 8 cloves

  • 4 cardamom pods

  • 225g/1 cup basmati rice, soaked

  • 100g/4 oz cauliflower florets, par-boiled

  • 600ml/2 1/2 cups water

  • salt

  • 5ml/1 tsp ground turmeric

  • 2.5ml/1/2 tsp black pepper

  • 1 tomato, sliced


Method:

  1. Heat the ghee and fry the onion and asafetida until golden. Stir in the cumin seeds, bay leaves, cinnamon, cloves and cardamom then add the rice and cauliflower and stir well.

  2. Pour in the water with the remaining ingredients except the tomato, bring to the boil then simmer gently for about 10 minutes until the rice is soft and the water has evaporated. Serve garnished with the tomato.
