Colored Rice Recipe
Ingredients

90ml/6 tbsp ghee
-
5ml/1 tsp cumin seeds

5 cloves
-
5 black peppercorns
-
2 bay leaves
-
2.5cm/1 in cinnamon stick

1 black cardamom pod
-
1 onion, thinly sliced
-
225g/8 oz/1 cup patna or
basmati rice
-
2 large cloves garlic, crushed
-
5ml/1 tsp garam masala
-
salt
-
225g/8 oz peas
-
500ml/17 fl oz/2 1/4 cups water

1.5ml/1/4 tsp red food color
-
5ml/1 tsp yellow food color
Method:

Heat the ghee in a heavy-based
pan and fry the cumin seeds until lightly browned.
Add the cloves, peppercorns, bay leaves, cinnamon,
cardamom, onion and garlic and fry until golden
brown. Mix in the drained rice and fry for 2
minutes.

Stir in the garam masala, salt,
peas and water. Bring to the boil, reduce the heat
to low, cover and cook for 15 minutes. If any water
is left, dry off on a high heat but don't stir; tip
the pan to check the water.

Turn off the heat. Mix the red
color into one side of the rice with fork and the
yellow color into the other side. Cover and leave
for 5 minutes for serving hot with raita,
cauliflower and a chicken dish.
