Fish Pulao Rice Recipe
Ingredients

100g/4 oz ghee
-
450g/1 lb fish fillets, cut
into chunks

150ml/1/4 pt water
-
salt
-
4 onions, sliced
-
675g/3 cups long-grain rice,
soaked
-
600ml/1 pt cups coconut milk
-
juice of 1/2 lemon
Masala
-
10ml/2 tsp coriander (cilantro)
seeds, roasted
-
4 dried red chilies
-
5ml/1 tsp cumin seeds
-
2.5ml/1/2 tsp ground turmeric
-
4 cloves
-
1 bunch fresh coriander
(cilantro)

1cm/1/2 in ginger root, grated
-
100g/4 oz desiccated (shredded)

Method:

Grind together all the masala
ingredients. Heat 45ml/3 tbsp of ghee and fry the
masala until it bubbles and turns slightly red. Add
the fish, salt and water, cover and simmer until the
fish is tender. Remove the fish from the pan and
keep it warm. Reserve the sauce. Heat the remaining
ghee and fry the onion until soft.

Add the rice and a little salt
and mix well. Pour in the fish sauce, coconut milk,
lemon juice and simmer until the rice is almost
cooked and the water is absorbed, adding a little
more water during cooking if necessary. Arrange the
fish pieces on top of the rice, cover and
continue to simmer over a low heat until the rice is
tender.
