Pulao Rice Recipe
Ingredients
-
45ml/3 tbsp ghee
-
1 onion, chopped
-
5ml/1 tsp ground cumin
-
seeds from 4 cardamom pods,
crushed
-
2 bay leaves
-
2.5cm/1 in cinnamon stick
-
5ml/1 tsp ground turmeric
-
225g/8 oz long-grain rice,
soaked and drained
-
salt and pepper
-
50g/2 oz dried apricots, sliced
-
50g/2 oz dried peach, sliced
-
50g/2 oz pistachios, chopped
-
50g/2 oz cashew nuts, chopped
Method:
-
Heat the ghee and fry the onion
until soft and lightly browned. Add the cumin,
cardamom, bay leaves, cinnamon and turmeric and fry
for 2 minutes, stirring. Stir in the rice and fry
for 2 minutes, stirring until well coated in
seasoned oil.

Season with salt and pepper and
pour in enough water to come 2.5cm/1 in above the
level of the rice. Sprinkle with the fruit and nuts,
cover and simmer gently for 20 minutes. Fluff up the
rice with fork before serving.
