Rice Dishes Recipes - Fruit and Nut Pulao Rice Recipe

Ingredients

  • 45ml/3 tbsp ghee

  • 1 onion, chopped

  • 5ml/1 tsp ground cumin

  • seeds from 4 cardamom pods, crushed

  • 2 bay leaves

  • 2.5cm/1 in cinnamon stick

  • 5ml/1 tsp ground turmeric

  • 225g/8 oz long-grain rice, soaked and drained

  • salt and pepper

  • 50g/2 oz dried apricots, sliced

  • 50g/2 oz dried peach, sliced

  • 50g/2 oz pistachios, chopped

  • 50g/2 oz cashew nuts, chopped


Method:

  1. Heat the ghee and fry the onion until soft and lightly browned. Add the cumin, cardamom, bay leaves, cinnamon and turmeric and fry for 2 minutes, stirring. Stir in the rice and fry for 2 minutes, stirring until well coated in seasoned oil.

  2. Season with salt and pepper and pour in enough water to come 2.5cm/1 in above the level of the rice. Sprinkle with the fruit and nuts, cover and simmer gently for 20 minutes. Fluff up the rice with fork before serving.
