Ingredients

225g/8 oz/1 cup long-grain
rice
-
600ml/1 pt/2 1/2 cups water
-
225g/8 oz peas
-
1 small potato, finely chopped
-
2 small aubergines (eggplant),
finely chopped
-
1 green (bell) pepper, finely
chopped
-
5ml/1 tsp ground turmeric
-
5ml/1 tsp tamarind concentrate
-
salt
Masala
-
10ml/2 tsp oil
-
45ml/3 tbsp coriander
(cilantro) seeds
-
30ml/2 tbsp split black beans
-
45ml/3 tbsp yellow split peas
-
2.5ml/1/2 tsp asafoetida
-
4 dried red chilies
Seasoning
-
45ml/3 tbsp oil
-
10ml/2 tsp mustard seeds
-
5ml/1 tsp split black beans
-
5ml/1 tsp yellow split peas
-
2 dried red chilies, halved
-
2-3 curry leaves
Method:
-
Cook the rice in boiling water
for about 10 minutes until tender. Drain and set
aside to cool. Heat the masala oil and fry all
the masala ingredients until lightly colored. Grind
to a fine powder. Heat the seasoning oil and fry the
seasoning ingredients until the mustard seeds start
crackling.

Add the peas, potatoes,
aubergines and pepper and simmer over a low heat
until the vegetables are tender, adding a little
water necessary. Add the turmeric, tamarind and
ground masala with a pinch of salt and fry for a few
minutes, stirring. Add the rice and stir until all
the ingredients are well blended.
