Rice Dishes Recipes - Lemon Rice Recipe

Ingredients

  • 600ml/1 pt/2 1/2 cups water

  • 225g/8 oz/1 cup basmati rice

  • 15ml/1 tbsp lemon juice

  • large pinch of salt

  • 30ml/2 tbsp ghee

  • 300ml/1/2 pt/1 1/4 cups coconut milk

  • 2-3 lemon slices

  • 15ml/1 tbsp chopped fresh coriander (cilantro)


Method:

  1. Bring the water to the boil, add the rice and simmer for a medium heat for 5-6 minutes. Drain off the water. Stir in the lemon juice and salt and cook for 5 minutes until the rice has soaked up the juice.

  2. Meanwhile, heat the ghee in a separate pan. Add the rice, stir carefully once or twice with a fork, pour in the coconut milk, cover and simmer for 5-7 minutes. Drain off any surplus milk. Garnish with lemon slices and coriander before serving.
