Lemon Rice Recipe
Ingredients

600ml/1 pt/2 1/2 cups water
-
225g/8 oz/1 cup basmati rice
-
15ml/1 tbsp lemon juice
-
large pinch of salt
-
30ml/2 tbsp ghee
-
300ml/1/2 pt/1 1/4 cups coconut
milk
-
2-3 lemon slices
-
15ml/1 tbsp chopped fresh
coriander (cilantro)
Method:

Bring the water to the boil,
add the rice and simmer for a medium heat for 5-6
minutes. Drain off the water. Stir in the lemon
juice and salt and cook for 5 minutes until the rice
has soaked up the juice.

Meanwhile, heat the ghee in a
separate pan. Add the rice, stir carefully once or
twice with a fork, pour in the coconut milk, cover
and simmer for 5-7 minutes. Drain off any surplus
milk. Garnish with lemon slices and coriander before
serving.
