Rice Dishes Recipes - Madras-style Lime Rice Recipe

Ingredients

  • 675g/1 1/2 lb/3 cups long-grain rice, soaked for 20 minutes

  • 1.75l/3 pts/7 1/2 cups water

  • 75ml/5 tbsp oil

  • 5ml/1 tsp ground turmeric

  • salt

  • 15ml/1 tbsp black mustard seeds

  • 1.5ml/1/4 tsp asafetida

  • 15ml/1 tbsp split black beans

  • 15ml/1 tbsp yellow split peas

  • 1 spring fresh curry leaves

  • 4 green chilies, chopped

  • juice of 2 limes


Method:

  1. Boil the rice in the water with 15ml/1 tbsp of the oil, the turmeric and salt for 10 minutes. Keep warm. Heat the remaining oil and fry the mustard seeds over until they start crackling. Add the asafetida, split beans and peas and fry until golden brown.

  2. Add the curry leaves and chilies and stir for a few seconds. Remove from the heat and pour over the rice. Squeeze over the lime juice and serve hot with Madras-style curries and papadums.
