Ingredients

45ml/3 tbsp ghee
-
10 cardamom pods
-
5 cloves
-
1 cinnamon stick
-
225g/8 oz button mushrooms,
sliced

450g/1 lb long-grain rice,
soaked and drained

salt and pepper
Method:
-
Heat the ghee and fry the
cardamom, cloves, cinnamon and mushrooms for 2
minutes, stirring. Add the rice and stir for 3
minutes until well coated in the seasoned ghee.

Pour
in enough water to come 2.5cm/1 in above the level
of the rice, bring to the boil, cover and simmer
gently for about 20 minutes until tender. Fluff the
rice grains with a fork and season with salt and
pepper before serving.
