Rice Dishes Recipes - Mushroom Pulao Rice Recipe

Ingredients

  • 45ml/3 tbsp ghee

  • 10 cardamom pods

  • 5 cloves

  • 1 cinnamon stick

  • 225g/8 oz button mushrooms, sliced

  • 450g/1 lb long-grain rice, soaked and drained

  • salt and pepper


Method:

  1. Heat the ghee and fry the cardamom, cloves, cinnamon and mushrooms for 2 minutes, stirring. Add the rice and stir for 3 minutes until well coated in the seasoned ghee.

  2. Pour in enough water to come 2.5cm/1 in above the level of the rice, bring to the boil, cover and simmer gently for about 20 minutes until tender. Fluff the rice grains with a fork and season with salt and pepper before serving.
