Ingredients
Masala
-
15ml/1 tbsp mustard seeds
-
1/2 coconut, grated (shredded)
-
3 dried red chilies
-
2.5ml/1/2 tsp ground turmeric
-
2.5ml/1/2 tsp asafetida
-
5ml/1 tsp tamarind concentrate
Seasoning
-
15ml/1 tbsp ghee
-
5ml/1 tsp mustard seeds
-
5ml/1 tsp split black beans
-
10ml/2 tsp yellow split peas
-
1 dried red chilies, halved
-
2-3 curry leaves
Method:
-
Cook the rice in boiling water
until tender. Drain. Grind the masala ingredients to
a fine paste with half the mango. Heat the seasoning
ingredients until the seeds start crackling. Add the
peanuts and fry until golden.

Add the remaining mango and
simmer for a few minutes. Add the masala and cook
until the raw smell disappears. Stir in the rice,
salt and curry leaves.
