Rice Dishes Recipes - Prawn and Coconut Pulao Rice Recipe

Ingredients

  • 900g/2 lb large peeled prawns (shrimp)

  • 5ml/1 tsp ground turmeric

  • 1.5ml/1/4 tsp ground red chili

  • 45ml/3 tbsp oil

  • 1 onion, chopped

  • 6 cardamom pods

  • 2 cinnamon sticks

  • 1.5ml/1/4 tsp cloves

  • 2.5ml/1/2 tsp black peppercorns

  • 2 bay leaves

  • salt

  • 450g/1 lb long-grain rice, soaked

  • 120ml/4 fl oz coconut cream

  • 450ml/3/4 pt water

  • 225g/8 oz peas


Method:

  1. Preheat the oven to 200C/400F/gas mark 6. Mix the prawns with the turmeric and chilies. Heat the oil and fry the onion until browned. Remove from the pan and drain. Add the cardamom, cinnamon, cloves, peppercorns and bay leaves to the pan and fry until slightly darkened.

  2. Stir in the prawns and salt. Add the rice, coconut cream and water, cover and simmer for 8-10 minutes, stirring occasionally. Remove from the heat and stir in the peas. Cover tightly.

  3. Reduce the oven temperature to 150C/300F/gas mark 2 and bake in the oven for 7-10 minutes until the liquid is absorbed. Garnish with the fried onions and serve with vegetables curry, coconut chutney and papadums.
