Dishes Recipes - Prawn and Tamarind Pulao Rice Recipe
Ingredients

30ml/2 tbsp ghee
-
1 onion, sliced
-
3 cloves garlic, sliced
-
25g/1 oz grated (shredded)
coconut
-
6 cloves
-
6 black peppercorns
-
2 sticks cinnamon
-
450g/1 lb long-grain rice,
soaked
-
1.2l/2 pts water
-
pinch of salt
-
450g/1 lb peeled prawns
(shrimp)
-
15ml/1 tbsp tamarind
concentrated
-
5ml/1 tsp chili powder
-
5ml/1 tsp ground turmeric
Method:

Heat half the ghee and fry the
onions, garlic and coconut until lightly browned.
Add the cloves, peppercorns and cinnamon and fry for
2 minutes. Add the rice and fry until well coated in
the oil and spices. Add the water and salt, bring to
the boil hen simmer over a medium heat until the
rice is three-quarters cooked.

Heat the remaining ghee in a
separate pan and fry the prawns, tamarind, chili
powder and turmeric for 3 minutes. Add this to the
rice. Transfer to a casserole dish, cover and cook
in a preheated oven at 150C/300F/gas mark 2 for
15-20 minutes until the rice is dry.
