Rice Dishes Recipes - Saffron Rice Recipe

Ingredients

  • 225g/8 oz/1 cup basmati rice

  • 600ml/1 pt/2 1/2 cups water

  • 225g/8 oz/1 cup sugar

  • 10ml/2 tsp ghee

  • pinch of saffron

  • 6 cloves

  • 25g/1 oz/3 tbsp raisins

  • 25g/1 oz/1/4 cup cashew nuts

  • 5ml/1 tsp ground cardamom


Method:

  1. Boil the rice in the water for about 5 minutes until half cooked. Add the sugar and stir well. Lower the heat, add the ghee and continue cooking.

  2. Soak the saffron in 15ml/1 tbsp of hot water for 10 minutes then add to the cooked rice with the cloves, raisins and nuts. Stir well, cover and leave over a low heat for 5-10 minutes. Sprinkle with cardamom before serving.
