Spiced Rice Recipe
Ingredients

275g/10 oz/1 1/4 cups long-grain rice,
soaked

45ml/3 tbsp ghee
-
2.5cm/1 in cinnamon stick
-
2 bay leaves
-
5 cloves
-
5 cardamom pods
-
2.5ml/1/2 tsp cumin seeds
-
salt
Method:
-
Drain the rice and leave to
stand. Heat the ghee and fry the whole spices and
salt for 2 minutes, stirring. Add the rice and stir
until well coated in the seasoned oil.

Add just
enough water to come 2.5cm/1 in above the level of
the rice, bring to the boil, cover and simmer gently
for 20 minutes. Fluff up the rice with a fork before
serving.
