Rice Dishes Recipes - Spiced Rice Recipe

Ingredients

  • 275g/10 oz/1 1/4 cups long-grain rice, soaked

  • 45ml/3 tbsp ghee

  • 2.5cm/1 in cinnamon stick

  • 2 bay leaves

  • 5 cloves

  • 5 cardamom pods

  • 2.5ml/1/2 tsp cumin seeds

  • salt


Method:

  1. Drain the rice and leave to stand. Heat the ghee and fry the whole spices and salt for 2 minutes, stirring. Add the rice and stir until well coated in the seasoned oil.

  2. Add just enough water to come 2.5cm/1 in above the level of the rice, bring to the boil, cover and simmer gently for 20 minutes. Fluff up the rice with a fork before serving.
