Ingredients

15ml/1 tsp ghee
-
6 cardamom pods
-
4 cloves
-
225g/8 oz basmati rice, soaked
-
150ml/1/4 pt water
-
25/1 oz sugar
-
50g/2 oz chopped fruit and nuts
-
1.5ml/1/4 tsp saffron, crushed
Method:

Heat the ghee and fry the
cardamom and cloves for 30 seconds. Stir in the rice
and cook for 5 minutes. Add the water, bring to the
boil then simmer for 10 minutes until the water has
been absorbed.

Stir in the sugar and nuts, cover and
simmer gently for 10 minutes until the rice is
tender and the grains are separated. Serve sprinkled
with saffron.
