Ingredients

30ml/2 tbsp ghee

2 bay leaves
-
2 cardamom pods
-
1 onion, chopped
-
15ml/1 tbsp chopped ginger root
-
3 cloves garlic, crushed
-
10ml/2 tsp chili powder
-
3 dried red chilies, halved
-
225g/8 oz/1 cup long-grain rice
-
600ml/1 p/2 1/2 cups tomato
juice
-
2 tomatoes, skinned and
quartered

15ml/1 tbsp chopped fresh
coriander (cilantro)
Method:
-
Heat the ghee and fry the bay
leaves and cardamom for 1 minute. Add the onion and
fry until soft. Add the ginger, garlic and chili
powder and fry for 1 minute. Add the rice and fry
for 2-3 minutes, stirring.

Add the tomato juice,
bring to the boil, cover and simmer for about 10
minutes until almost cooked. Add the tomatoes and
simmer until the rice is tender. Serve garnished
with the coriander.
