Raitas Recipes - Banana and Nut Raita

Ingredients

  • 600ml/1 pt natural (plain) yoghurt

  • 30ml/2 tbsp ghee, melted

  • 2.5ml/1/2 tsp mustard seeds

  • 15ml/1 tbsp minced peanuts

  • 1/2 green chili, minced

  • 2.5ml/1/2 tsp cumin seeds

  • 3 firm bananas, thickly sliced

  • 15ml/1 tbsp chopped fresh coriander (cilantro)

  • 30ml/2 tbsp oil

  • 30ml/2 tbsp flaked almonds

  • 2.5ml/1/2 tsp garam masala


Method:

  1. Beat the yoghurt lightly and place in a serving bowl. Heat the ghee and fry the mustard seeds until they start crackling. Add the peanuts and fry for 1 minute, stirring.

  2. Add the chilies and cumin seeds then stir in the bananas. Remove from the heat and stir into the yoghurt with the coriander.

  3. Heat the oil and fry the almonds until golden brown. Drain off excess oil then stir the almonds into the yoghurt.

  4. Dry roast the garam masala for a few seconds until darkened then sprinkle over the raita before serving.
