Raitas Recipes - Mango Raita

Ingredients

  • 3 ripe mangoes

  • 600ml/1 pt natural (plain) yoghurt

  • salt

  • sugar

  • 45ml/3 tbsp grated (shredded) coconut

  • 4 green chilies

  • 15ml/1 tbsp ghee

  • 2.5ml/1/2 tsp mustard seeds

  • 1 small onion, chopped


Method:

  1. Peel and cube the mangoes. Beat the yoghurt until smooth then season to taste with salt and sugar. Grind the coconut and chilies to a paste then stir into the yoghurt with the mango cubed.

  2. Heat the ghee and fry the mustard seeds until they start crackling. Add the onion and fry until lightly browned. Add the yoghurt mixture and remove from the heat. Serve with rice dishes.
