Raitas Recipes - Marrow Raita
Ingredients

225g/8 oz marrow (squash),
peeled and grated
-
300ml/1/2 pt water
-
450ml/3/4 pt natural (plain)
yoghurt
-
salt
-
5ml/1 tsp ground roasted cumin
-
30ml/2 tbsp chopped fresh
coriander (cilantro)

1 small green chili, chopped
Method:

Place the marrow and water in a
pan over a medium heat and cook for 10 minutes until
tender. Strain through a colander, squeezing out any
excess water with your hands.

Place the yoghurt in a
bowl and whisk with a fork until smooth. Add the
marrow, salt and half the remaining ingredients.

Chill in the refrigerator for 2-3 hours before
serving sprinkled with the remaining garnish.
