Raitas Recipes - Marrow Raita

Ingredients

  • 225g/8 oz marrow (squash), peeled and grated

  • 300ml/1/2 pt water

  • 450ml/3/4 pt natural (plain) yoghurt

  • salt

  • 5ml/1 tsp ground roasted cumin

  • 30ml/2 tbsp chopped fresh coriander (cilantro)

  • 1 small green chili, chopped


Method:

  1. Place the marrow and water in a pan over a medium heat and cook for 10 minutes until tender. Strain through a colander, squeezing out any excess water with your hands.

  2. Place the yoghurt in a bowl and whisk with a fork until smooth. Add the marrow, salt and half the remaining ingredients.

  3. Chill in the refrigerator for 2-3 hours before serving sprinkled with the remaining garnish.
