Raitas Recipes - Mint and Aubergine Raita

Ingredients

  • 1 aubergine (eggplant), cut into 2.5cm/1 in pieces

  • 450ml/3/4 pt natural (plain) yoghurt

  • pinch of ground red chili

  • 2.5ml/1/2 tsp ground roasted cumin

  • salt

  • 15ml/1 tbsp chopped fresh mint

  • 1 small onion, thinly sliced

  • 1 spring onion, thinly sliced


Method:

  1. Steam the aubergine for 10 minutes then mash it with a fork and set aside to cool.

  2. Mix together the remaining ingredients, stir in the mashed aubergine and chili before serving.
