Raitas Recipes - Mint and Aubergine Raita
Ingredients

1 aubergine (eggplant), cut
into 2.5cm/1 in pieces
-
450ml/3/4 pt natural (plain)
yoghurt
-
pinch of ground red chili
-
2.5ml/1/2 tsp ground roasted
cumin
-
salt
-
15ml/1 tbsp chopped fresh mint
-
1 small onion, thinly sliced
-
1 spring onion, thinly sliced
Method:
-
Steam the aubergine for 10
minutes then mash it with a fork and set aside to
cool.
-
Mix together the remaining ingredients, stir
in the mashed aubergine and chili before serving.
