Raitas Recipes - Minted Potato Raita
Ingredients

15ml/1 tbsp ground coriander
(cilantro)
-
30ml/2 tbsp chopped fresh mint
-
2.5ml/1/2 tsp pomegranate seeds
-
1 green chili, seeded
-
juice of 1 lime
-
450ml/3/4 pt natural (plain)
yoghurt
-
3 boiled potatoes, cubed
-
salt
Method:
-
Grind the coriander, mint,
pomegranate seeds, chili and lime juice to a paste.
-
Mix into the yoghurt with the potatoes and season to
taste with salt. Chill well before serving.
