Raitas Recipes - Okra Raita

Ingredients

  • 10ml/2 tsp oil

  • 5ml/1 tsp mustard seeds

  • 5ml/1 tsp cumin seeds

  • 5ml/1 tsp split black beans

  • 5ml/1 tsp yellow split peas

  • 1 dried red chili, halved

  • 1.5ml/1/4 tsp asafoetida

  • 2 curry leaves

  • 225g/8 oz okra, chopped

  • salt

  • 300ml/1/2 pt natural (plain) yoghurt


Method:

  1. Heat the oil and fry the mustard and cumin seeds, split beans, split peas, chili, asafoetida and curry leaves until the mustard seeds start crackling.

  2. Add the okra and simmer over a low heat until the okra is tender. Season to taste with salt and simmer for 2 minutes.

  3. Add the yoghurt and blend together well. Serve cold or at room temperature.
