Raitas Recipes - Potato and Onion Raita

Ingredients

  • 600ml/1 pt natural (plain) yoghurt

  • 50g/2 oz potato, boiled in its skin and cut into 5mm/1/4 in pieces

  • 1 small onion, finely chopped

  • 1/2 small green chili, chopped

  • salt

  • 2.5ml/1/2 tsp ground roasted cumin

  • 1.5ml/1/4 tsp ground red chili

  • 1.5ml/1/4 tsp garam masala

  • 15ml/1 tbsp chopped fresh coriander (cilantro)


Method:

  1. Whisk the yoghurt with a fork until smooth. Stir in the potato, onion, chili and salt.

  2. Store in the refrigerator until required. Sprinkle with the remaining ingredients  before serving.
