Raitas Recipes - Raita Mould

Ingredients

  • 30ml/2 tbsp gelatin

  • 120ml/4 fl oz water

  • 1.76l3 pts natural (plain) yoghurt

  • 1 small cucumber, peeled and chopped

  • 5ml/2 tsp salt

  • 1 small apple, peeled and chopped

  • 1 small green (bell) pepper, chopped

  • 2 green chilies, seeded and chopped

  • 5ml/1 tsp celery salt

  • salt

  • pinch of mustard powder

  • 5ml/1 tsp sugar

  • 1/2 small cabbage, finely shredded


Method:

  1. Dissolve the gelatin in the water then stir it into the yoghurt and leave until the yoghurt start to thicken.

  2. Mix in all the remaining ingredients except the cabbage, spoon into a mould leave to set in the refrigerator.

  3. Turn out on to a serving plate and serve surrounded with the shredded cabbage.
