Raitas Recipes - Spicy Cucumber Raita

Ingredients

  • 1 cucumber

  • 600ml/1 pt natural (plain) yoghurt

  • pepper

  • 2 green chilies, chopped

  • 45ml/3 tbsp chopped fresh coriander (cilantro)

  • 5ml/1 tsp cumin seeds

  • 2.5ml/1/2 tsp garam masala


Method:

  1. Peel the cucumber and grate it coarsely. Squeeze out the excess moisture. Beat the yoghurt then stir in the cucumber and pepper and spoon into a serving bowl.

  2. Sprinkle with the chilies and coriander. Dry roast the cumin seeds for a few seconds until golden then grind and sprinkle over the yoghurt.

  3. Dry roast the garam masala for a few seconds until darkened then sprinkle over the raita and serve.
