Raitas Recipes - Spicy Potato Raita

Ingredients

  • 3 boiled potatoes, cubed

  • 450ml/3/4 pt natural (plain) yoghurt

  • salt and pepper

  • 2 green chilies, chopped

  • 15ml/1 tbsp oil

  • 5ml/1 tsp mustard seeds

  • 1 tomato, skinned and chopped

  • 2 curry leaves


Method:

  1. Mix the potatoes with the yoghurt, salt, pepper and chilies.

  2. Heat the oil and fry the mustard seeds until they start crackling, then add the tomato and curry leaves and fry until the fat appears on the surface and the tomatoes are cooked. Stir in the yoghurt.
