Raitas Recipes - Tomato Raita
Ingredients

15ml/1 tbsp oil
-
pinch of asafoetida
-
5ml/1 tsp yellow split peas.
crushed
-
1cm/1/2 in ginger root, grated
-
1 bunch spring onions
(scallions), chopped
-
225g/8 oz tomatoes, skinned and
chopped
-
600ml/1 pt natural (plain)
yoghurt
-
2.5ml/1/2 tsp garam masala
-
30ml/2 tbsp chopped fresh
coriander (cilantro)

2 green chilies, chopped
Method:

Heat the oil and fry the
asafoetida and peas for 2 minutes. Add the ginger
and fry for 2-3 minutes. Add the spring onions and
fry for 1 minute.

Stir in the tomatoes then remove
from the heat. Beat the yoghurt then stir it into
the tomato mixture and transfer to a serving bowl.

Dry roast the garam masala for a few seconds until
darkened then stir into the raita. Sprinkle with the
coriander and chilies and chill before serving.
