Raitas Recipes - Tomato Raita

Ingredients

  • 15ml/1 tbsp oil

  • pinch of asafoetida

  • 5ml/1 tsp yellow split peas. crushed

  • 1cm/1/2 in ginger root, grated

  • 1 bunch spring onions (scallions), chopped

  • 225g/8 oz tomatoes, skinned and chopped

  • 600ml/1 pt natural (plain) yoghurt

  • 2.5ml/1/2 tsp garam masala

  • 30ml/2 tbsp chopped fresh coriander (cilantro)

  • 2 green chilies, chopped


Method:

  1. Heat the oil and fry the asafoetida and peas for 2 minutes. Add the ginger and fry for 2-3 minutes. Add the spring onions and fry for 1 minute.

  2. Stir in the tomatoes then remove from the heat. Beat the yoghurt then stir it into the tomato mixture and transfer to a serving bowl.

  3. Dry roast the garam masala for a few seconds until darkened then stir into the raita. Sprinkle with the coriander and chilies and chill before serving.
