Raitas Recipes - Vegetable Raita

Ingredients

  • 1 cucumber, peeled and finely chopped

  • 1 tomato, skinned and finely chopped

  • 1 onion, finely chopped

  • 1 green chili, finely chopped

  • 1 small bunch fresh coriander (cilantro), chopped

  • 450ml/3/4 pt natural (plain) yoghurt

  • salt

  • 10ml/2 tsp oil

  • 5ml/1 tsp mustard seeds

  • 5ml/1 tsp cumin seeds

  • 5ml/1 tsp split black beans

  • 5ml/1 tsp yellow split peas

  • 2.5ml/1/4 asafoetida

  • 1 dried red chili, halved

  • 2 curry leaves


Method:

  1. Mix together the cucumber, tomato, onion, chili, half the coriander, the yoghurt and salt. Heat the oil and fry the remaining ingredients until the mustard seeds start crackling.

  2. Add to the yoghurt and garnish with the remaining coriander. Serve cold or at room temperature.
