Raitas Recipes - Vegetable Raita
Ingredients

1 cucumber, peeled and finely
chopped
-
1 tomato, skinned and finely
chopped
-
1 onion, finely chopped
-
1 green chili, finely chopped
-
1 small bunch fresh coriander
(cilantro), chopped
-
450ml/3/4 pt natural (plain)
yoghurt
-
salt
-
10ml/2 tsp oil
-
5ml/1 tsp mustard seeds
-
5ml/1 tsp cumin seeds
-
5ml/1 tsp split black beans
-
5ml/1 tsp yellow split peas
-
2.5ml/1/4 asafoetida
-
1 dried red chili, halved
-
2 curry leaves
Method:
-
Mix together the cucumber,
tomato, onion, chili, half the coriander, the
yoghurt and salt. Heat the oil and fry the remaining
ingredients until the mustard seeds start crackling.
-
Add to the yoghurt and garnish with the remaining
coriander. Serve cold or at room temperature.
