Cabbage Vadas
Ingredients

100g/4 oz split black beans
-
450ml/3/4 pt water
-
4 green chilies, chopped
-
5ml/1 tsp asafoetida
-
salt
-
50g/2 oz cabbage, finely
chopped
-
30ml/2 tbsp peas
-
30ml/2 tbsp chopped fresh
coriander (cilantro)

oil for frying
Method:
-
Soak the split beans in the
water for 2 hours. Add the chilies, asafoetida and
salt and grind to a smooth dough, adding a very
little water.

Mix in the cabbage, peas and
coriander. Take a ladleful of dough on the palm of
your left hand and flatten it with your right hand.

Make a hole in the centre, slip the dough into hot
oil and fry until browned and crisp. Drain on
kitchen paper and serve hot with chutney.
