Cashew Nut Pakoras
Ingredients

450g/1 lb cashew nuts
-
450g/1 lb gram flour
-
5ml/1 tsp ground turmeric
-
5ml/1 tsp chili powder
-
2.5ml/1/2 tsp salt
-
150ml/1/4 pt cup oil
-
1 spring fresh curry leaves,
chopped

ghee or oil for deep-frying
Method:
-
Chop the nuts. Mix the flour,
turmeric, chili powder and salt. Heat the oil, add
the flour and mix well.

Add the chopped nuts and
curry leaves and mix well. Leave to cool slightly
then make into small balls.
-
Heat the ghee or oil and
fry the balls until golden. Drain and serve hot or
cold.
